    JOB SUMMARY:

    Supervises the team and production in the Bakery including direct oversight of Team Members and the complete program and operation of baked goods and products for the resort.

    MAJOR RESPONSIBILITIES:

    • Assists in managing and developing the entire bakery program which includes research and development of products. Ensures sanitation, monitors quality and cost effectiveness of product and ensures all food preparation is made to specification. Maintains mechanical maintenance of equipment.

    • Provides coaching and development of hourly direct reports, ensuring Team Members are properly trained and upholding policies and procedures, and scheduling Team Members in accordance with predetermined forecast and budget. Serves as role model by maintaining a high degree of professionalism and upholding the UO leadership competencies.

    • Orders food items needed for production. Monitors recipes and coordinates with other departments to meet food cost targets and minimize waste and variances.

    • Oversees daily practices of cleanliness and safe food practices of assigned venue. Works closely with direct reports to uphold standards of HACCP program.

    • Maintains mechanical maintenance of equipment, ensures equipment and work area is clean and working properly, and places work orders for repairs as needed.

    • Understands and actively participates in Environmental, Health & Safety responsibilities by following established UO policy, procedures, training and team member involvement activities.

    • Performs other duties as assigned.

    EDUCATION:

    • Culinary degree or Chef's Apprentice preferred.

    EXPERIENCE:

    • 3+ years of experience in a high-volume bakery production facility.

    • 1+ year of supervisory experience.

    • Or equivalent combination of education and experience.

    ADDITIONAL INFORMATION:

    • Experience working with chocolate, laminated dough, sugar art, cake decorating, and scratch baking (leavened dough) preferred.
